Fruitcake & Jelly Kitchen

Position Title:

Baker / Jelly Cook

Required Schedule Flexibility

(1-5 scale with 5 as most flexible): 4

Job Description:

The Fruitcake and Jelly Kitchen operates 6 days a week from 8 am to 58 pm 8
We bake about 20 to 30 thousand fruitcakes a year and make 95 thousand jars of jellies, fruit spreads and apple butter.  We are now making the ice cream for the creamery and pasta for the Keeter Center Restaurant.

Primary duties and responsibilities:

Measure and mix ingredients accurately to have a quality product when finished,
Make decisions as to when the product is done,
Maintain cleanliness at all times in and around food product,
Check in groceries each week,
Take inventory of groceries and finished product on a weekly basis,
Greet customers and give tours of the facility while telling them about the College,
Process phone, email and internet orders of student-made products on computer (Fall semester),
Package customer orders (Fall semester),
Assist with the mailing machine (Fall semester).

Secondary duties and responsibilities:

General cleaning of the work area, sweeping mopping, etc.,
Assist with office duties in supervisor’s absence,
Run the cash register.

Basic Qualifications:

Able to lift heavy ingredients (sugar, flour, cases of fruit),
Appropriate dress and neat in appearance due to daily visitors, uniform standards,
Punctuality is a must, due to being a production area,
Ability to multi-task and pay attention to detail.

Desirable Qualifications:

Ability to work well with others,
Pleasant personality,
Able to speak and listen accurately when talking on the phone.

Learning Objectives:

The student will:
Learn to measure and mix ingredients accurately, producing a quality product when finished,
Learn to operate and maintain expensive equipment for ice cream, and cleaning, fruit spreads, apple butter, ovens, etc.
Be able to make decisions as to when the product is done,
Properly label and package product to store until needed, using 1st in/1st out rule,
Develop habits of maintaining cleanliness at all times, in and around food products,
Ability to check in groceries each week and sign off for delivery,
Ability to take inventory of groceries and finished product on a weekly basis,
Be able to greet visitors and explain what we do in the Fruitcake & Jelly Kitchen.
